Here is a dish that is simple to prepare. It is a roasted chicken rubbed with garlic, ginger and honey with enough salt to taste. For a family of four, two teenage children and the parents, a medium-size chicken is more than enough for a dinner. A dish of blanched green vegetable or salad to accompany the chicken.
Ingredients:
1 medium ‘kampong’ chicken, cleaned
4 pips garlic
2 slices ginger
3 tablespoon honey
1 teaspoon salt
garlic oil
Method:
Mince garlic and ginger.
Add salt and honey and mix evenly.
Rub all over chicken. Place chicken in a roasting pan.
Put in the moderate oven for 2 hours or until tender.
Using a smashed lemon grass sprinkle garlic oil over chicken a few times while the chicken is roasting.
You can insert a skewer to see if it is cooked. Take out and place on a dish, cut into pieces with a scissor.
Serve while is still hot with salad and chilly sauce.
