This one of the best Homemade Sausage Recipes for making beef stick. It was given to me by our neighbor in Minnesota. I had no trouble finding the Tender Quick salt there but cannot find it in the south. This is a really good beef stick recipe but make sure you find the salt before attempting this recipe.
This is a lengthy process so be prepared.
Ingredients:
- 5 pounds ground beef
- 2 1/2 tsp coarse ground pepper
- 2 1/2 tsp garlic salt
- 2 tsp dry mustard
- 5 tsp Morton's Tender Quick Salt
- 1 tsp liquid hickory smoke or salt
DIRECTIONS:
Day 1 mix all ingredients in a large bowl, cover and refrigerate.
Day 2 mix well, cover and return to refrigerator
Day 3 mix well, cover and return to refrigerator
Day 4 mix and form into 2 logs.
Place on rack of broiler pan and cook at lowest temperature for 8 hours turning every 2 hours.
Slice, serve with cheese and crackers.
