I’ve finally perfected my meatball recipe.. these babies were sooo bloody amazingly good! This is the one that’s earnt the right to be written down in my book of favourites👌🏻
Cracker Meatballs
500gm beef mince
1 tsp dried oregano
1 tsp dried garlic
2 eggs, lightly whisked
3 Tbs uncooked rice
Salt and pepper to taste
Mix all together really well, until it all comes together and the mixture ‘thickens’ or looks less ‘wet’. Roll into balls and add to a 3.5 lt slow cooker.
In a jug mix together..
1 500gm can rosella tomato soup
1/4 cup bbq sauce
1/4 cup masterfoods sweet chilli sauce
2 tsp English/Dijon mustard
3 tsp lemon juice, fresh or bottled
Pour over meatballs. Cook for 4 to 5 hours on low. I turned the meatballs once 3/4 through cooking time
