This Meatballs and Rice Casserole is also great if you substitute wild rice for the white rice making this casserole more nutritious. Wild rice is actually not rice but a watergrass seed. We were introduced to wild rice while living in Minnesota and continue to cook with it.
Meatball Ingredients:
- 1 pound ground beef
- 1/2 cup fine dry breadcrumbs
- 1/4 cup whole milk
- 2 Tbsp chopped onions
- 1 tsp salt
- 1 tsp Worcestershire sauce
- 2 Tbsp oil
- Combine above ingredients. Shape into meatballs and brown in oil.
- 2 cups cooked rice
- 1/2 cup thinly sliced celery
- 1/2 cup chopped green pepper
- 1 can cream of mushroom soup
- 1/3 cup water
- 1/2 cup shredded cheddar cheese
DIRECTIONS:
Mix remaining ingredients together and pour over meatballs in a 2 quart casserole.
Bake 40-45 minutes at 350°.
Top with cheese and bake 5 minutes longer until brawn.
