This Cabbage Patch Stew is a quick and easy recipe. It is a nice comfort food dish to serve in cool weather. Add a green salad along with a hot roll for a full meal.
Ingredients:
- 1/2 pounds ground beef
- 2 Tbsp olive oil
- 2 medium onions, sliced
- 1 cup shredded cabbage
- 1/2 cup diced celery or green pepper
- 1 #2 can kidney beans
- 1 cup cooked tomatoes
- 1 Tbsp chili powder
- salt and pepper to taste
- hot mashed potatoes
DIRECTIONS:
Brown beef in olive oil over medium heat.
Add onions, cabbage, celery and cook until slightly yellow.
Add water to cover, about two cups.
Simmer 15 minutes.
Add beans, tomatoes, and seasoning.
Cook 15 minutes.
Serve in bowls topped with hot mashed potatoes.
Serves 6.
