COCONUT CAKE

COCONUT CAKE


Ingredients:
50g desiccated coconut
150 ml fresh milk
110g margarine
110 white sugar (crushed it a bit to resemble castor sugar)
2 eggs
250g self-raising flour
Pinch of salt
Icing
25g coconut
200g icing sugar
75ml lemon juice or water

Method:
1. Soak coconut in milk for about 2 hrs (didn't have much time, so I soaked it for lesser time)
2. Preheat oven to 170 degrees Celsius. Grease the baking tin.
3. Cream together margarine and sugar until light and fluffy. Beat in the eggs; one at a time; mixing well after each addition
4. Add flour, salt and soaked coconut and gently mix until all has combined
5. Spoon the mixture into the tin and bake for about 30 minutes
6. Sprinkle coconut into a pan; heat gently until it starts to colour and toast. Let it cool
7. Sieve icing sugar into a bowl and gradually add lemon juice/water. When the cake is done and a bit cool; drizzle the icing over it
Lastly sprinkle the toasted coconut
